Billy's Chili
Billy's Chili

This recipe I got from my father - who got this recipe from my brother - who adapted this recipe from a Texas Chili Cook Off Cook Book (or something).  I believe the original recipe was called "Jay's Chili".   My Dad, who was tired of reading this recipe to me every time I made it (which is often during football season) finally wrote it in my cookbook.   I decide to share this recipe in its original form (in my Fathers' handwriting).  John and I have modified the recipe over time.

Changes include

  1. Substitute half of the ground beef with beef stew cubes
  2. Peppers
    1. use fresh jalapenos
    2. add more jalapenos (seeded)
    3. hungarian hot peppers add heat and flavor
    4. add 1 fresh habanero to kick this bad boy up a notch or two
  3. Add two 19 ounces cans kidney beans
  4. Freeze it - flavor seem to blend more (gets hotter too!)
  5. Cook this for 3-5 hours - add water as needed

The flavor seems to improve with freezing.
