Clam Dip

This is a family favorite and usually disappears shortly after it's set out.
Clam Dip
2 small cans minced clams, with juice
1 teaspoon lemon juice
1/2 green pepper, chopped
1 teaspoon dried oregano
dash of cayenne pepper
1 medium onion, finely chopped
2 cloves garlic, finely chopped or minced
1/2 teaspoon dried parsley
1/4 lb. butter or margarine
1/2 cup seasoned bread crumbs
Topping
parmesan cheese
paprika
Preheat over to 350 degrees. Simmer clams together with lemon juice for about 15 minutes. Add green pepper, oregano, cayenne, onion, garlic, parsley and butter. Simmer 5 more minutes. Mix in breadcrumbs (if mixtures is dry add water - if too wet, simmer a little longer). Place in baking dish or clam shells, sprinkle with parmesan cheese and paprika. Bake for 20 minutes. Serve warm - if serving in a baking dish - serve withcrackers on the side.
Suggestion - I like to change the recipe as follows:
Clam Dip Topping
2 small cans minced clams, with juice
1 teaspoon lemon juice
1/2 green pepper, chopped
1 teaspoon dried oregano
1/4 teaspoon of cayenne pepper
1 medium onion, finely chopped
2 cloves garlic minced
1/4 cup fresh chopped parsley
1/4 lb. butter or margarine
1/2 cup seasoned bread crumbs
Fresh grated parmesan cheese
1/3 cup chopped green and red peppers
3 slices cooked bacon, chopped
Preheat over to 350 degrees. Simmer clams together with lemon juice for about 15 minutes. Add green pepper, oregano, cayenne, onion, garlic, and butter. Simmer 5 more minutes. Mix in breadcrumbs and fresh parsley. Place in baking dish or clam shells. Bake for 20 minutes. Remove baking dish, and turn on broiler. Sprinkle freshly grated parmesan cheese, sprinkle with cayenne pepper (I like spicy food, whimps can use paprika instead). Sprinkle with red & green pepper, and bacon. Place under broiled until cheese is melted, and bacon is sizzling good. Serve warm - if serving in a baking dish - serve with crackers on the side.
